Isomerization of glucose to fructose, a reversible reaction catalyzed by isomerase enzyme, is a very important industrial process to produce high fructose syrup (HFS). The isomerisation of glucose to fructose experiments was conducted using soluble and immobilized glucose isomerase enzyme. Glucose isomerase (GI) from Streptomycesrubiginosus was immobilized onto resin Indion 850 . The catalytic efficiency of immobilized GI in isomerization of glucose to fructose was found as three fold higher than that of free GI.The experimental investigations covered a wide range of parameters value such as isomerisation temperature, pH range and incubation period and enzyme concentration. This paper has comparative study of soluble and immobilized Glucose isomerase enzyme.
