The aim of this study is to extract pectin from orange peels. In order to increase profits for citrus orange producers, farmers and processors, orange peels, a by-product of citrus orange processing, were studied as a source of pectin. Orange, specifically, the sweet orange is the most commonly grown orange tree. The present work is addressed to the development of the process required for the extraction of value added products like pectin from orange fruit peel, which is the waste of orange juice processing industry. The outcome of the present work highlighted that the sweet orange are good source of pectin and does have the potential to become important raw material for food processing industries. Extracted pectin from these orange fruit peel is majorly used in food processing industries, pharmaceutical and is traditional gelling agent for jam and jellies.
