Title

Determination of specific Activity of Amylase to Estimate Age of Saliva

Abstract

To estimate age of saliva by determination of specific activity of amylase Salivary alpha amylase (sAA) is the most abundant enzyme in saliva and it is primarily produced after neurotransmitter stimulation by the acinar cells in the salivary glands [30]. The amount of sAA excretion is independent of salivary flow rate [31] and the major function of sAA is to assist transformation of dietary carbohydrates by hydrolyzing α-1,4 linkages of starch into maltose, maltrotriose and larger oligosaccharides. In addition to this function, sAA plays a role in a variety of processes related to oral health . The saliva contains an enzyme called salivary amylase which hydrolyses starch into maltose. The complete digestion of starch occurs only in the small intestine by the action of pancreatic amylase. The activity of enzymes is strongly affected by several factors, such as temperature and pH.
