Drying experiment of thin layer of fish (split in a butterfly style from ventral side) was conducted in a University of Dehradun, Uttarakhand. An incubator was used for drying the fishes under three different temperatures (500, 600 and 70⁰C) and sample weight were continuously observed/recorded every one-hour interval. Data had been regressed to twelve mathematical models to estimate a appropriate model for drying of pangasius fish. The models were compared primarily based on their coefficient of dedication (EF), root mean square error (RMSE), and reduced chi-square (X²). Midilli & Kucuk version had the highest value of EF, the bottom RMSE and X².
