Title

Development of value added product formulated by Indian gooseberry (Phyllanthus emblica), Pearl millet and Apple.

Abstract

Gooseberry (amla) or E, officinalis is an Indian traditional plant. Amla is a deciduous tree whose size varies from small to medium, which belongs to the Phyllanthaceae family. It has abundant amount of vitamin C and many nutrients like flavonoids, quercetin, iron, calcium, carotene, thiamine, niacin. It also contains chebulagic acid, citric acid, ellagic acid and gallic acid. The fruit has anti-inflammatory, antiartherosclerotic, antipyretic, gastroprotective, hepatoprotective, nephroprotective, antihypercholesterolemic, wound healing, cardioprotective properties. The present study’s aim was to develop a value added product from Indian gooseberry, pearl millet and apple. The objectives of the study were to develop the product formulated by Gooseberry. Muesli was developed because it is very nutritious and can be easily prepared and consumed by any age group and it has good shelf life. The product, Gooseberry muesli was develop in different concentrations i.e., 10g, 20g and 30g of dried gooseberry in sample A, sample B and sample C respectively. Sensory evaluation was done using 9 point hedonic rating scale. Also, the proximate analysis of the product was tested and the shelf life of the product was analyzed. It is revealed that the sensory evaluation of sample A was liked very much (8 point) in all parameters in 9-point hedonic rating scale. Data was statistically analyzed using SPSS software. The differences between the samples were statistically significant at p<0.05. It contains good amount of flavonoids (138.4mg/100g) and vitamin C (24.8mg/100g). The shelf life of the sample A was more than one month.
