Collagens are the foremost abundant high relative molecular mass proteins in both invertebrate and vertebrate organisms, including mammals, and possess mainly a structural role, existing differing types according with their specific organization in distinct tissues. In the last 20 years, marine collagen has attracted great scientific and industrial interest as a 'blue resource', with potential to be used in various health-related sectors, like food, medicine, pharmaceutics and cosmetics. Consequently, tremendously diverse marine organisms became an excellent source of various biological macromolecules which will be wont to develop tissue- engineered substitutes with wound healing properties. The marine collagen market is additionally briefly discussed to spotlight the opportunities and therefore the most profitable areas of interest. The collagen is extracted using fish skin, scales, bone, etc. After addressing the extraction of collagen from aquatic sources and its physicochemical properties, this review focuses on the utilization of marine collagen and its derivatives.
