Title

Development of Little Millet Khichdi mix incorporated with Green Gram dal and Tomato Powder

Abstract

Khichdi is termed as super food because it cantains very high nutritional density. Little millets and green gram are contain many high nutrients. Little millet is a annual Herbaceous and it have rich in carbohydrates and its protein content is higher than rice Which used in building of the body. It prevent BP and other cancers. Green gram is Good quality proteins with high digestibility and excellent source of carbohydrates, Essential in fatty acids, vitamins, minerals and fibres. Tamoto powder contains lycopene And it also rich in carbohydrates and proteins. The green gram are soaked for 12 hr, After draining from soaked water it have to dry for 24 – 48 hr till 11 – 13 % moisture is Obtained. Next we have to receive green gram soaked for 2 hr in salt solution and drying To moisture content of 6.0 %. After we receiving the tomatoes remove the seeds and Heat it for 70 -90 ℃ for 5 min. after extraction of pulp and drying the pulp in oven at 70 ℃ until moisture riches to 10 % and it to powder form. Addition of parboiled little Millet, green gram dal, tamato powder as per treatment and addition of dry carrot cubes, Dryed chick peas and mixing in low flame for 30 min. The sensory and physical analysis Will be performed.
