Title

AN OVERVIEW OF RICE BEER PREPARATION

Abstract

Rice beer is one of the oldest and most widely consumed alcoholic drinks in India, and in the north-east India region the third most popular drink. It is produced by the brewing and fermentation of starches, derived from rice. During the brewing process, fermentation of the rice starch sugars in the wort produces ethanol with the help of yeast, resulting rice beer. Mostly rice beer traditionally brewed. The present paper is a comparative review on the methods of preparing rice beer by some popular tribes of India. In rice beer preparation, mostly natural carbonation effect is removed during processing.
