In comparison to rice, ragi is thought to be a coarser grain due to its fibrous seed covering. In contrast to other minerals like phosphorus, iron, magnesium, and fibre, Ragi is a particularly rich source of calcium, with a calcium content of 0-3 to 0.4 g. Because Ragi contains more enzymes like lysine, threonine, and valin than other millets, its protein is generally more evenly balanced. High nutritional content fibre contributes to healthy gastrointestinal function and shortens intestine transit time. Both the blood postprandial glucose level and the overall amount of lipoprotein cholesterol in blood serum will decrease as a result. The finger millet’s fibre content aids in the immune system’s development and increases the bioavailability of calcium. It effectively combats colon cancer.
