Title

Production of single cell protein from fruit peel waste using Lactobacillus paracasei

Abstract

SCP refers to dead and dried microbial cells or total proteins extracted from pure microbial cultures of algae, bacteria, filamentous fungi, unicellular algae and cyanobacteria grown on various carbon sources and used as protein supplements in human or animal foods. Single-cell protein (SCP) production has the potential to feed an ever-increasing global population at more affordable prices. Protein comes from a range of vegetables, fruits and grains that the common man often cannot afford. Microbial proteins can therefore provide an alternative source to feed economically weak communities in the world in general and in India in particular. Microorganisms such as bacteria, yeast, fungi and algae use cheap raw materials and waste to produce biomass, protein concentrates or amino acids. A mixture of materials can be used as a substrate for the production of pineapple peels, pomegranate peels, apple peels. The mix fruit waste found good amount was good amount in carbohydrates, fat, protein contents. In this work, we aimed to study the possibility of bioconversion of fruit waste into SCP using Lactobacillus on fruit waste media. The mixed fruit waste was used to produce biomass. The biomass thus produced can be used as food or fodder.
