This study evaluates the nutrition and quality of fortified millet chikki, a traditional Indian snack, enhanced for cost-effectiveness. Millet, a nutrient-dense but underutilized grain, was selected for its health benefits. The chikki was fortified with essential vitamins and minerals to address common nutritional deficiencies. The results showed significant improvements in protein, fiber, and micronutrient levels, making the fortified chikki a healthier alternative to conventional options. Cost analysis indicated that the fortification process was economically viable, suggesting potential for large-scale production and distribution. This fortified millet chikki not only enhances dietary intake but also offers a cost-effective solution to malnutrition, particularly in developing regions.
