Title

TO DETERMINE THE JUICE CONTENT, CITRIC ACID, TOTAL SOLUBLE SOLID AND TSS TO ACID RATIO OF FRUITS AVAILABLE IN LOCAL MARKET OF BHIWANDI AREA, MAHARASHTRA, INDIA

Abstract

Research study included the determination of Juice Content, Citric Acid content, Total Soluble Solids Contents and TSS to Acid Ratio of Fruits Juice available in Local Market of Bhiwandi Area, Maharashtra , India. For this study , fruit market of Tinbatti area and Angaon area of Bhiwandi was selected and samples including Lemon, Orange and Grapes were selected for analysis purpose. 43% to 60%. Juice content was obtained from all the fruits. Citric acid was found more in Lemon than orange and grapes in both area. Total soluble solids contents was more in Grapes 19.6 oBrix of Angaon area (Area-2) than Grapes 15.4 oBrix of Tinbatti area (Area-1). The total soluble solids contents was noted high in Grapes and low in Lemon of both areas. TSS to acid ratio obtained more in Grapes than other analysed sample of fruits in both areas.
