Title

Evaluation of Physicochemical Parameters and Cholesterol Content in Crude Sunflower and Groundnut Oils from Rural Areas of Solapur, Maharashtra

Abstract

The nutritional quality and market value of edible oils are strongly influenced by their physicochemical properties, including saponification value, acid value, free fatty acid (FFA) content, iodine value, and cholesterol concentration. This study focuses on analyzing these key parameters in crude sunflower and groundnut oils obtained directly from local farmers in the rural region of Mohol Taluka, located in the Solapur District of Maharashtra. Despite producing these oils, many farmers in the region are unaware of their inherent quality, which can have significant implications for both public health and economic gain. This study analyses and compares the quality of crude sunflower and groundnut oils using established methods: reflux back titration for saponification value, the iodometric method with Hanus solution for iodine value, and the Liebermann-Burchard method for cholesterol analysis. Results show groundnut oil has higher values for most physicochemical properties, except for iodine value, which is greater in sunflower oil. Sunflower oil also contains more cholesterol. Beyond scientific evaluation, the research seeks to inform and empower local farmers, helping them improve oil quality, boost consumer health, and enhance economic returns through better understanding and processing of their products
