This project presents a comparative study of the properties of jackfruit seed oil and palm oil. Jackfruit seed oil, a lesser-known byproduct of jackfruit, is examined alongside palm oil, a widely used vegetable oil. The study focuses on key parameters such as fatty acid composition, antioxidant properties, thermal stability, and potential health impacts. Through analytical methods including gas chromatography for fatty acid profiling and oxidative stability tests, this research aims to provide a comprehensive comparison of these oils. The findings highlight the unique properties of jackfruit seed oil, potentially offering alternative uses in food and cosmetics industries, while also assessing palm oil’s established benefits and drawbacks. This comparative analysis seeks to contribute to a better understanding of these oils roles and applications in various sectors. Results show notable differences in lipid composition, with jackfruit seed oil exhibiting higher levels of unsaturated fatty acids compared to palm oil. The study also highlights the sustainability potential of jackfruit seed oil as an eco-friendly alternative to palm oil, given its source as a waste product from fruit processing.
