Title

A comprehensive study of Kodo and Fonio Millets: Nutritional powerhouses for individuals with celiac disease

Abstract

Abstract The nutritional profile and therapeutic potential of Fonio (Digitaria exilis) and Kodo (Paspalum scrobiculatum) millets for the treatment of celiac disease are examined in this review. These ancient grains are safe for celiac patients because, according to analyses of multiple samples from different agroecological zones, their gluten content is very low (<5 ppm). Fonio showed remarkable mineral bioavailability, with balanced essential amino acid profiles and superior protein quality. Both millets' flavonoids and phenolic compounds exhibit strong antioxidant properties. When compared to traditional gluten-free substitutes, clinical trials revealed notable improvements in intestinal permeability, inflammatory markers, and nutritional status. In addition to being gluten-free, millets are an excellent and significant source of vital nutrients, especially for those with celiac disease, who may have intestinal damage that impairs their ability to absorb certain nutrients. Millets are typically easy to digest because they are high in fiber and non-glutinous. Additionally, they are thought to be non-acid-forming, which makes them appropriate for people of all ages and supports a strong digestion ability. Additionally, some millets possess prebiotic qualities that inculcate good digestion by feeding good gut bacteria. High palatability and acceptance of the formulated products were confirmed by sensory evaluations. This article addresses the micronutrient deficiencies frequently linked to gluten-free diets and identifies Kodo and Fonio millets as safe, nutritionally superior substitutes for celiac patients.
