Title

Development and evaluation of khakhra using jamun seed and black cumin seed powder as a nutritional snack for diabetic patients

Abstract

Diabetes Mellitus is a chronic metabolic disorder characterized by elevated blood glucose levels, primarily resulting from defects in insulin secretion and/or function. If left uncontrolled, it can lead to severe complications such as cardiovascular disease, nephropathy, and neuropathy. This study aimed to develop a nutritious khakhra tailored for diabetic individuals by incorporating standardized proportions of Jamun seed powder (Syzygium cumini) and black cumin seed powder (Nigella sativa), both of which are known for their antidiabetic, antioxidant, and anti-inflammatory properties. Jamun seed powder contains bioactive compounds such as jamboline and jambosine, which help regulate postprandial blood glucose by inhibiting carbohydrate-digesting enzymes. In addition, black cumin seed powder contributes valuable antioxidants and may aid in improving insulin sensitivity. The formulation was subjected to organoleptic evaluation, considering sensory parameters such as appearance, taste, Flavor, aroma, texture, and overall acceptability. The results indicated broad consumer acceptance, with high scores across multiple sensory attributes. Nutritional analysis revealed a relatively high carbohydrate content and lower dietary fiber. However, the inclusion of functional ingredients may contribute to a lower glycemic index (GI), thereby mitigating sharp blood sugar spikes. Furthermore, the product offers added nutritional value through natural antioxidants, healthy fats, and potential protein content, positioning it as a balanced snack option for individuals managing diabetes. In conclusion, the developed khakhra demonstrates significant potential as a diabetic-friendly, functional food product. Future improvements may include the addition of fiber-rich ingredients to further enhance its nutritional profile. These findings also suggest a promising market opportunity driven by the growing demand for health-oriented, diabetes-specific food innovations.
