Title

A functional approch to diabetes management : designing a nutrient dense Savory cake

Abstract

The present study focuses on the development of a functional savory pound cake formulated specifically for diabetic individuals. The cake incorporates nutrient-rich ingredients such as Trigonella foenum-graecum (methi) leaves and drumstick (Moringa oleifera) pulp, known for their antidiabetic, antioxidant, and therapeutic properties. In combination with finger millet flour and wheat flour, the formulation aims to provide a low glycemic index product that supports blood glucose management. The batter was prepared by blending both dry and wet ingredients, followed by the addition of the vegetable components, and baked to yield a moist, flavorful product. Sensory evaluation indicated high overall acceptability, particularly in appearance, texture, and aroma. Nutritional analysis revealed that the product is rich in dietary fiber, moderate in protein, and contains a balanced energy value, making it a suitable dietary option for individuals managing diabetes. The study highlights the potential of incorporating medicinal plants into functional bakery products to enhance both health benefits and consumer appeal.
