Abstract: The study aims to investigate the characteristic behaviour of Capsicum Annum (Red Chillie) (Moisture content, drying rate and drying time) during drying in a tray dryer and open sun drying. The moisture content data were collected at different time intervals until a constant weight was achieved. The results showed that the drying rate increased with increasing air temperature and decreased as the moisture content of the sample decreased. The drying behaviour was fitted with different kinetic models to determine the most suitable one for describing the drying process. The results showed that the drying behaviour of Capsicum Annum was best described by the tray dryer at all temperatures.
