Title

Nutrition and antioxidant activity of millets

Abstract

Millets are small grains grown in semi-arid conditions. They are major staple food in many parts of the world. They are still the principal source of energy, protein, carbohydrate, dietary fiber and phytochemicals required by the body in developing countries and they can grow in water deficient areas as well. They have much health promoting nutraceuticals and hence there is a need to identify natural sources than depending on medication. These millets are gluten free which is great advantage for people suffering from celiac disease, they are antidiabetic, anticarcinogenic, antimicrobial. The present study aimed to investigate the nutraceutical properties. The quantitative results showed that kodo millet was highest in protein content and barnyard millet had comparatively more amount of carbohydrate and least in kodo millet which is apt for a diabetic diet. The starch content was highest in proso millet and least in foxtail millet. The fiber content was highest in kodo millet as well as free radical scavenging activity was highest in kodo millet and finger millet. Hence this investigation helps for quantitative estimation of nutraceutical properties of millets and hence can be included in daily diet as millets are exploited for various culinary preparations for their health benefits.
