Title

Culinary Practices of Mushrooms among Adivasi Communities in Chirang District, Assam

Abstract

Abstract: The Adivasi communities of Assam form a very important segment in the ethno cultural mosaic of Assam. Many of the different clans of them, including the Santhals, are inhabiting in the Bodoland Territorial Region (BTR). They have a very rich, yet simple and healthy tradition of harnessing the utilities of edible varieties of mushrooms in the broader culinary sphere. Often to contribute their healthy balanced diet, they add mushroom in their major meals. This paper tries to delve into their routine and celebratory culinary practices, integrating mushroom, individually or with other ingredients. The changing paradigm of the knowledge, attitude and practices of mushroom cooking and eating is also emphasized, in the context of today’s global and generic approach of dietetics. The culinary traditions associated with mushroom has been embedded in the social structures of the various ethnic groups, including the Adivasi. Preservation of these traditions should enrich the collective wisdom of not only the Adivasi, but also the other communities.
