Abstract
The study focused on the development of sustainable plant-based meat analogues utilizing garden cress (Lepidium sativum) seed protein powder and Garden cress seeds were selected for their rich nutritional profile, which included high protein content, essential fatty acids, dietary fiber, minerals, and diverse bioactive phytochemicals with antioxidant, anti-inflammatory, antimicrobial, antidiabetic, anticancer, hepatoprotective, and bone-healing properties.
