Garden cress (Lepidium sativum L.) seeds are an underutilized plant source with considerable nutritional and functional potential, particularly as a source of plant protein. The present study was undertaken to extract protein from garden cress seeds using different wet processing methods and to evaluate the physicochemical and functional characteristics of the extracted proteins. Garden cress seed powder was subjected to three extraction methods, namely alkaline extraction followed by isoelectric precipitation, water extraction, and acid extraction. The obtained protein extracts were evaluated for proximate composition, colour characteristics, protein yield, protein purity, protein recovery, functional properties, surface morphology, Fourier Transform Infrared (FTIR) spectra, and thermal characteristics to identify the most suitable extraction method.
